Avocado Sandwich

Avocado Sandwich with Courtney!


  • Sourdough bread (2 slices)
  • Goat cheese, crumbled (1/2 cup)
  • Avocado, mashed (1 large)
  • Lime, juiced (1)
  • Garlic salt (to taste)
  • Pepper (to taste)
  • Chilli flakes (to taste)


  1. Lightly toast bread
  2. While bread is toasting, mix together avocado, goat cheese and lime juice
  3. Once the bread is toasted to your liking, spread the avocado mixture on to each piece of bread
  4. Sprinkle with garlic salt, pepper, and chili flakes to taste
  5. Your avocado sandwich is ready to eat!


This is Courtneys favourite lunch! It’s a great spin on everyones favourite breakfast, avocado toast! This avocado sandwich is easily customizable and is quick and easy to make. It’s the perfect lunch!

Originally from Vancouver, Canada, Courtney Zelter graduated with a Bachelor of Fine Arts in Dance Performance from Southern California’s Chapman University. Courtney then moved to Los Angeles where she pursued a career in dance and fitness. She appeared in music videos and commercials, while expanding to dance based instructional workout videos. Courtney’s been fortunate enough to work and learn all around the world, including Tokyo and the Caribbean. Courtney’s grown an understanding and appreciation for cross training with the intention of injury prevention and career longevity.

In 2020, she moved back to Vancouver where she started PWRHOUSE Fitness. She brings you endurance, strength, and confidence with every class.
