Salmon Bowls with Shaina!

INGREDIENTS

BOWL

  • Sesame oil (1 1/2 tbs)
  • Coconut oil (1 tsp)
  • Fresh ginger, grated (2 tsp)
  • Garlic, minced (4 cloves)

SAUCE

  • Chicken or veggie broth (1/2 cup)
  • Sesame oil (1 1/2 tbs)
  • Tamari sauce (3 tbs)
  • Coconut sugar (1 tbs)

SALMON & MARINADE

  • Salmon fillets (4)
  • Pure maple syrup (2 tbs)
  • Frozen, shelled edamame (1 cup)
  • Carrots, cut into matchsticks (4 whole)
  • Green cabbage, cut into bite-sized pieces (4 cups)
  • Bell pepper, diced (1 whole)
  • Sea salt (1/2 tsp)
  • Brown rice (1 1/2 cups) OR brown rice noodles (1 package)
  • Green onions for garnish
  • Optional: red pepper flakes (1/4 tsp)
  • Tamari (1 tbs)
  • Dijon mustard (2 tbs)

INSTRUCTIONS

  1. Cook the brown rice or brown rice noodles according to package directions. Set aside
  2. Combine the salmon marinade ingredients in a small bowl. Place the salmon fillets skin side down on a foil-lined baking sheet. Brush with the marinade. Broil for about 8-10ish minutes, until inside is light pink but not dry. Set aside.
  3. Heat sesame oil and coconut oil in a wok or large skillet. Once hot, add the ginger and garlic, cook for about a minute until the garlic is golden.
  4. Add the edamame, carrots, and cabbage. Cook, stirring often, until veggies soften, about 8 minutes. Remove the veggie mixture from the wok or frying pan and set aside.
  5. Whisk the sauce ingredients in a small bowl.
  6. Pour the sauce into the wok and bring to a simmer. Lower the heat and add the brown rice or brown rice noodles. Give it a really good stir.
  7. Remove the wok from the heat, and stir in the veggies.
  8. Place the rice and veggie mixture into individual bowls, top with 1 piece of salmon and garnish with green onions.
