INGREDIENTS
- Creamy peanut butter (2/3 cup)
- Red curry paste (4 tbs)
- Water (1/3 cup )
- Brown sugar (1/4 cup)
- Soy sauce (3 tbs)
- Fish sauce (1 tbs)
- Rice vinegar (2 tbs)
- Fresh ginger, minced (2 tbs or more to taste)
- Red pepper flakes or fresh chopped chilies (4 tbs or more to taste)
- Unsalted roasted peanuts (for topping)
- Cilantro (for topping)
INSTRUCTIONS
- Add all ingredients to a medium bowl
- Whisk together until smooth
- Heat and serve with your favourite protein, veggies, and grain
ABOUT THE RECIPE
Jasmine enjoys eating this sauce on tofu and vegetable stir fry with quinoa, topped with cilantro and extra crushed peanuts. She first made this recipe for spicy Thai peanut sauce when she met her fiancé. He loves this Thai peanut sauce because it’s delicious and so flavourful! Jasmine notes that this recipe makes a lot of sauce and can easily be halved if necessary.
