Taco Salad

INGREDIENTS

  • Ground beef (1 lb)
  • Avocado oil, or any oil of choice (1 tsp )
  • Taco seasoning, store bought or homemade (2 tbs)
  • Romaine lettuce, chopped (8 oz)
  • Grape tomatoes, halved (1 1/3 cup)
  • Cheddar cheese, shredded (3/4 cup)
  • Avocado, cubed (1 medium)
  • Green onions, chopped (1/2 cup)
  • Salsa (1/3 cup)
  • Sour cream (1/3 cup)

INSTRUCTIONS

  1. In a skillet, heat oil over high heat and add ground beef. With a spatula, break up into pieces and stir fry for 7-10 minutes. Cook until the moisture has evaporated and the beef is browned.
  2. Add taco seasoning to the ground beef and stir until well combined. Set aside.
  3. Add all remaining ingredients except for salsa, sour cream, and green onions to a large bowl. Add the ground beef and toss together.
  4. Divide the salad into your bowls and top with salsa, sour cream, and green onions to taste.

ABOUT THE RECIPE

This taco salad recipe is perfect for the days you need a quick, healthy meal! You can easily make substitutions/omissions to fit all dietary needs and what you already have in your fridge! Amy likes to use kefir as a substitution to add probiotics to the salad.
