“Pick Your Protein” Lunch Salad With Shaina!

INGREDIENTS

  • Chopped leftover roasted chicken (1 cup) OR tuna (1 can, drained) OR chickpeas, (1 can, drained & rinsed)
  • Plain Greek/Icelandic yogurt (1/2 cup)
  • Lemon juice (1/4 of a lemon)
  • Organic or vegan mayonnaise (1 tbsp)
  • Pure maple syrup (1 tbsp)
  • Dijon mustard (1 tsp)
  • Finely chopped celery (2 tbsp)
  • Chopped fresh herbs (2-3 tbsp. Shaina like parsley, basil, chives, and oregano)
  • Raw sunflower seeds (1 tbsp)
  • Sea salt and black pepper (to taste)
  • Avocado (1/4 chopped, optional)

INSTRUCTIONS

  1. Mix ingredients together in a bowl until combined.
  2. Serve on cucumber slices, whole grain crackers, whole grain bread, or salad greens.

ABOUT THE RECIPE

Although Shaina loves all of the protein options, pictured above is the tuna version. Her kids also love them, especially when served on cucumber slices. Shaina’s tried all listed protein options and enjoys them all! No matter how you eat it, this is a quick and easy lunch salad you can feel good about!
